Ingredients

  • Eggplants - 13.4 oz
  • Parmesan Cheese - 1.6 oz
  • Tomatoes - 5.6 oz
  • Mayonnaise - 3½ tablespoons
  • Garlic - 0.5 oz
  • Olive Oil - 1½ tablespoons
  • Ocean salt - to taste
  • Herbes de Provence - ½ teaspoon
  • Lemon-Pepper Mix - to taste
  • Herbs - to taste

Slice the eggplant into thick slices.

Heat 1 tablespoon of oil in a skillet over high heat.
