Ingredients
- Lobster tails - 1 piece
- Butter - 3.5 oz
- Carrot - 1 piece
- Parsley - 1 piece
- Celery salt - 1 piece
- Leek - 1 piece
- Onion - 1 head
- Chervil - 1 piece
- Tarragon - 1 piece
- Fish Oil - to taste
- Apple Wine - to taste
Step by Step guide
Step 1
Cut the fresh lobster into portion-sized pieces, crack or saw the shell on the legs, and remove the tentacles and antennae.
Step 2
Prepare the vegetable broth. For this, mix the butter, carrot, parsley root, celery, leek, blanched onion, chervil leaf, tarragon, wine, and fish stock.
Step 3
Strain the mixture.
Step 4
Place the lobster pieces along with its juice in a saucepan, pour in the strained vegetable broth, and cook until done.
Step 5
Transfer the cooked lobster to a serving dish, strain all or part of the broth in which the lobster was cooked into a pot, bring to a boil, remove from heat, add pieces of butter, allow the butter to melt quickly, add small slices of carrot that have been cooked until tender, and pour this sauce over the hot lobster pieces.
