  • Onion - ½ piece
  • Marinated cherries - 0.3 oz
  • Mayonnaise - 4 tablespoons
  • Herbes de Provence - 1 teaspoon
  • Grated Pecorino Pepato Cheese - 10 tablespoons
  • Ground Black Pepper - to taste
  • Ocean salt - to taste
  • Herbs - to taste

Cover the meat with a bag and pound it with a mallet.
