Ingredients
- Pork Neck - 10.6 oz
- Olive Oil - 1 teaspoon
- Onion - ½ piece
- Marinated cherries - 0.3 oz
- Mayonnaise - 4 tablespoons
- Herbes de Provence - 1 teaspoon
- Grated Pecorino Pepato Cheese - 10 tablespoons
- Ground Black Pepper - to taste
- Ocean salt - to taste
- Herbs - to taste

Cover the meat with a bag and pound it with a mallet.

Then remove the foil and bake for another 15 minutes.
