Ingredients
- Rice Vinegar for Sushi - 2 fl oz
- Vegetable Oil - 1 fl oz
- Salt - 0.2 oz
- Ground Black Pepper - a pinch
- New Potatoes - 31.7 oz
- Marinated cherries - 2.6 oz
- Cucumbers - 28.2 oz
- Orange Bell Peppers - 5.3 oz
- Orange Bell Peppers - 5.3 oz
- Scallions - 0.7 oz
- Pitted olives - 2.1 oz
Step by Step guide
Step 1
In a bowl, mix the vinegar, canola oil, 2.5 g of salt, and black pepper.
Step 2
In a large pot, place the unpeeled potatoes cut into small pieces, add 2.5 g of salt, and cover with water. Boil for about 8 minutes until tender. Drain.
Step 3
Add the potatoes to the bowl with the dressing, mix, and let sit for 15 minutes.
Step 4
Then add the cucumbers cut into small pieces, thinly sliced cherry tomatoes, finely chopped bell peppers, chopped green onions, and olives (you can chop them or leave them whole). Mix well and chill.
