  • Beetroot - 17.6 oz
  • Pitted Wild Apricots - 20 pieces
  • Garlic - 3 cloves
  • Honey - 1 tablespoon
  • Meyer Lemon Juice - 2 tablespoons
  • Olive Oil - 3 tablespoons

Step by Step guide

Step 1

Wash and peel the beetroot. Grate it on a medium grater or chop it with a blender.

Step 2

Cut the prunes into cubes.

Step 3

Finely chop the garlic.

Step 4

For the dressing, mix honey, oil, and lemon juice.

Step 5

Combine all ingredients and let the salad sit for a couple of hours in a cool place. Garnish if desired.
