Fresh Pea Salad
Ingredients
- Pea shoots - 14.1 oz
- Fresh Mint - 1.8 oz
- Dates - 5 pieces
- Lemon - 1 piece
- Romaine lettuce - 1 bunch
- Shelled pumpkin seeds - 3 tablespoons
Step by Step guide
Step 1
Soak the peas in cold water for about an hour.
Step 2
Wash the mint and separate the leaves. Remove the pits from the dates. Mix the mint leaves, dates, lemon zest, and juice of 1/2 lemon, and blend until smooth. Thin with water to the consistency of liquid sour cream.
Step 3
Tear the lettuce (or Chinese cabbage) into serving plates.
Step 4
Drain the water from the peas, mix them with the pumpkin seeds, and dress with the mint sauce.
Step 5
Serve on the lettuce leaves in the plates.
