Description
This is a great light dressing for green salads and spinach.
Ingredients
- Tomatoes - 2 pieces
- Garlic - 1 clove
- Red Wine Vinegar - 1 tablespoon
- Olive Oil - 1 tablespoon
- Chopped Sage Leaves - 1 tablespoon
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Dip the tomatoes in boiling water, then in ice water and remove the skin. Cut in half and remove the seeds. Then, grate the flesh into a bowl using a coarse grater.
Step 2
Crush the garlic with a knife and add it to the tomatoes. Then stir in the vinegar and, while whisking, add the oil. Season with salt and pepper and add the parsley. Remove the garlic.
