Ingredients
- Olive Oil - 0 fl oz
- Red Long Chili Peppers - 1 piece
- Shallot - 0.1 oz
- Garlic - 2 cloves
- Tomatoes - 0.1 oz
- Spiced Tomato Juice - 1 fl oz
- Scorpion fish fillet - 1 piece
- Pancetta - 6 slices
- Butter - 0.9 oz
Step by Step guide
Step 1
Preheat the oven to 392°F.
Step 2
Heat the olive oil in a skillet and add finely chopped red pepper, finely chopped shallot, and garlic. Sauté until soft. Then add chopped tomatoes and a little tomato juice. Mix and transfer to a blender. Blend until smooth.
Step 3
Stuff the fish fillet with thinly sliced garlic and wrap it in thin slices of pancetta.
Step 4
Place in a large ovenproof skillet and fry for 20 minutes, adding a small amount of water and butter.
Step 5
Serve with a warm red pepper coulis.
