Fried Artichokes with Tartar Sauce
Ingredients
- Garlic - 6 cloves
- Tahini - 8 fl oz
- Meyer Lemon Juice - 8 fl oz
- Chopped Sage Leaves - 3 tablespoons
- Artichoke bottoms - 8 pieces
- Olive Oil - 32 fl oz
- Wheat Flour - 4.2 oz
- Salt - to taste
Step by Step guide
Step 1
Crush the garlic with salt in a mortar until it forms a paste. You can also finely chop the garlic.
Step 2
Transfer the garlic paste to a bowl and add tahini. Stir in the lemon juice. Add 1 to 3 tablespoons of water to achieve a thick sauce consistency. Add 2 teaspoons of parsley.
Step 3
Heat the oil in a large pot over medium heat (check the oil temperature by dropping in a toothpick: it should darken quickly).
Step 4
Coat the artichokes in flour, shaking off the excess. When the oil is hot, fry the artichokes, turning occasionally, until golden brown, about 2 minutes.
Step 5
Remove the artichokes with a slotted spoon and place them on paper towels, sprinkling with salt. Serve with the prepared sauce, garnished with the remaining parsley.
