- Chinese green beans - 2 lbs
- Wheat Flour - 1.8 oz
- Activated Baking Soda - ¼ teaspoon
- Safflower Oil - 10 fl oz

Step 1
Cut the bean pods so that each contains a seed. Rinse and dry them.
Step 2
Drop the beans into boiling salted water, add a pinch of baking soda, and cook uncovered for 1 hour until they are soft. Drain the water.
Step 3
Heat the oil in a deep skillet to 356°F. Dip the beans in flour and cook in batches for 6 minutes until they are golden brown. Serve as a side dish with meat.
