Fried Beef Liver in Rice Flour
Ingredients
- Water - 1 qt
- Ocean salt - 0.7 oz
- Beef Kidneys - 21.2 oz
- Egg white - 4 pieces
- Glutinous Rice Flour - 3.5 oz
- Olive Oil - 1 fl oz
- Garlic - 1 clove
- Mashed Potatoes - 21.2 oz
- Truffle Oil - to taste
- Parsley - to taste
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Dissolve sea salt in water and soak the liver in it for 20 minutes.
Step 3
Cut the soaked liver into portion-sized pieces.
Step 4
Lightly beat the egg yolks with a fork or whisk.
Step 5
Dip the liver in the yolks to coat it.
Step 6
Add salt and pepper to the rice flour, mix, and coat the liver pieces in it.
Step 7
Dip the liver in the yolks again and coat in rice flour once more.
Step 8
Heat olive oil in a skillet over medium heat and sauté the garlic clove for 2 minutes.
Step 9
Remove the garlic from the skillet and fry the liver until golden brown on both sides.
Step 10
Serve the fried liver with mashed potatoes, truffle oil, and parsley.
