Ingredients
- Broccoli - 1½ cups
- Edamame Beans - 1 cup
- Egg replacer - ½ cup
- Black sesame seeds - 2 teaspoons
- Vegetable Oil - to taste
- Ginger-Garlic Paste - 2 teaspoons
- Chili Flakes - ¼ teaspoon
- Basmati rice - 2 cups
- Soy Sauce - 2½ tablespoons
- Toasted Cumin Seeds - to taste
- Scallions - to taste
Step by Step guide
Step 1
Heat a small amount of vegetable oil in a wok over medium heat. Add the egg substitute and cook for 2 minutes, stirring until it sets. Transfer to a plate. Wipe the wok with a paper towel.
Step 2
In the wok, heat the sesame oil over medium heat, add the garlic and red pepper flakes. Sauté for a minute. Then add the small broccoli florets, edamame, and rice. Stir-fry for 2 minutes.
Step 3
Add the soy sauce and cooked eggs, mix well and serve, garnished with sesame seeds and green onion.
