Fried chanterelles with potatoes
Ingredients
- Pickled Chanterelles - 17.6 oz
- Onion - 1 head
- Potato - 28.2 oz
- Vegetable Oil - 1 fl oz
- Butter - 1.1 oz
- Garlic - 1 clove
- Ground coriander - to taste
- Scallions - 0.5 oz
- Sour Cream - to taste
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Peel the potatoes and cut them into sticks. Pat them dry with paper towels.
Step 3
Peel the onion and slice it into thin wedges.
Step 4
Clean the chanterelles with a damp cloth or brush; rinse them only if they are dirty. Cut larger chanterelles so that all the mushrooms are approximately the same size.
Step 5
In a skillet, heat vegetable oil, add the potatoes, and fry for about 15 minutes, stirring occasionally, until they are partially cooked.
Step 6
Add the onion and sauté, stirring, for another 10 minutes, until the potatoes are tender and the onion is golden.
Step 7
In a separate skillet, melt some butter and add a little vegetable oil. Add the mushrooms, making sure they are in a single layer, and sauté, stirring occasionally, until they release their moisture.
Step 8
Add a clove of garlic, pressed through a garlic press, to the chanterelles and sauté for another 5 minutes.
Step 9
Add coriander to the chanterelles, season with salt and pepper, and mix well.
Step 10
Add the mushrooms to the skillet with the potatoes, stir, and cook for another 5 minutes.
Step 11
When serving, sprinkle the mushrooms with chopped green onions and add sour cream to taste.
