Fried Chicken with Celery and Ginger (Jirou Chao Qincai)
Ingredients
- Corn Starch - 2 teaspoons
- Chicken fillet - 2 pieces
- Coarse Salt - to taste
- Egg white - 1 piece
- Vegetable Oil - 3 tablespoons
- Grated Ginger Root - 1 piece
- Leek - 1 piece
- Celery stalk - 5 pieces
- Soy Sauce - 1½ tablespoons
Step by Step guide
Step 1
Cut the chicken fillet into thin strips. Transfer to a bowl and add cornstarch, egg white, and a pinch of salt. Mix well and let sit for 10 minutes.
Step 2
Heat a wok over high heat until it starts to smoke. Add 2 tablespoons of oil and spread it over the surface. Add the chicken and stir-fry for 1–2 minutes. Then transfer to a plate.
Step 3
Return the wok to high heat and pour in the remaining oil. Then add the finely julienned ginger and leek and stir-fry for 30 seconds. Add the chopped celery and stir-fry for another minute until tender but still slightly crunchy inside.
Step 4
Return the chicken to the wok along with the juices released and soy sauce. Cook, stirring, for another 1–2 minutes until the chicken is cooked through.
