Ingredients

  • Water - 1 fl oz
  • Poultry - 4 lbs
  • Sugar - 1 tablespoon
  • Salt - 3 tablespoons
  • Bay leaf - 5 pieces
  • White Balsamic Cream - 1 fl oz
  • Green peppercorns - 10 pieces
  • Non-alcoholic sparkling wine - 17 fl oz
  • Vegetable Oil - 1 fl oz
  • Garlic - 1 head
  • Olive Oil - 1 fl oz
  • Lemon - 1 piece
  • Parsley - 1 bunch
  • Penne rigate - 10.6 oz
  • Milk - 16 fl oz
  • Wheat Flour - 4 tablespoons
  • Butter - 2.1 oz
  • 10% cream - 7 fl oz
  • English Dry Mustard - 1 teaspoon
  • Hard Cheese - 8.8 oz

Step by Step guide

Step 1

Marinade: In a pot, pour water, add salt, sugar, vinegar, bay leaves, and peppercorns. Bring to a boil, remove from heat, and let cool completely. Add sparkling mineral water and mix.

Step 2

Rinse the chicken, split it in half along the backbone, and place it in the cooled marinade. Place a small plate on top of the chicken to ensure it is fully submerged in the marinade. Put the pot with the marinade in the refrigerator for 10–12 hours (I usually leave it overnight).

Step 3

Place the marinated chicken in a baking dish, pour in 2–3 tablespoons of marinade and 2 tablespoons of vegetable oil. Cover the chicken with a lid or foil and bake in a preheated oven at 392°F for 20 minutes. Then remove the lid (or foil) and bake for another 20–25 minutes.

Step 4

While the chicken is baking, prepare the garlic sauce. In a bowl, press the garlic, add oil, lemon juice, water, salt, pepper, and chopped parsley, mix and let it infuse. Remove the chicken from the oven and generously coat it with the garlic sauce.

Step 5

Cook the pasta according to the package instructions, then drain the water. While the pasta is cooking, prepare the sauce. In a large saucepan, combine milk, flour, and butter. Heat over medium heat, stirring constantly, until the butter is completely melted. Add cream, mustard, salt, pepper, and grated cheese to the sauce. Mix everything and bring to a boil (over medium heat), stirring constantly. Cook for about five minutes or until thickened.

Step 6

Transfer the pasta to the sauce, mix, and heat everything evenly. That's it! Serve with the chicken! And wine! Don't forget the wine!))
