Ingredients
- Soba Noodles - 9.7 oz
- Vegetable Oil - 3 spoons
- Green peppercorns - 1 piece
- Skin-On Chicken Breasts - 2 pieces
- Courgette - 1 piece
- Spanish onions - ½ heads
- Scallions - 4 stalks
- Chili jam - 10 fl oz
Step by Step guide
Step 1
Boil the noodles in boiling water for 2-3 minutes until tender. Drain and rinse under cold water.
Step 2
Heat a wok over medium heat for 1-2 minutes until it starts to smoke, then add vegetable oil. Add the sliced chicken, thinly sliced bell pepper, zucchini, half-moon sliced onion, and finely chopped green onion. Stir-fry for 3-4 minutes until the chicken is cooked through and the vegetables are browned.
Step 3
Add the chili sauce and bring to a boil. Divide the noodles between two bowls and top with the chicken and vegetables.
