Description
If you can't find Santorini Gaea sauce at your local store, you can make it yourself: mix 200 grams of canned crushed tomatoes with 1 tablespoon of finely chopped onion and 50 grams of finely chopped sun-dried tomatoes. Enjoy your meal!
Ingredients
- Chicken bones - 4 pieces
- Olive Oil - 3 tablespoons
- Minced garlic - 1 head
- Paprika - to taste
- Oregano - to taste
- Sugar - to taste
- Scallions - 6 pieces
- Butter - 2 tablespoons
- Salt - to taste
- Passata Tomato Sauce - 7.1 oz
- White Pepper (whole) - to taste
Step by Step guide
Step 1
In a large bowl, marinate the chicken in olive oil with garlic, paprika, oregano, salt, and pepper for 20 minutes.
Step 2
Cover the bottom of a skillet with a thin layer of sugar. Add the onion, sliced into rings, and pour in enough water to cover the onion.
Step 3
Cover the skillet with parchment paper and keep on low heat until the liquid evaporates.
Step 4
Add the butter and wait for the onion to caramelize.
Step 5
Remove the chicken from the marinade and grill until tender.
Step 6
In a small saucepan, heat the tomato sauce.
Step 7
Arrange the chicken on 4 plates and drizzle with tomato sauce. Surround the chicken with the caramelized onions. Drizzle with a little olive oil.
Step 8
Serve with potatoes or polenta.
