Ingredients
- Grated Ginger Root - 2 tablespoons
- Soy Sauce - 2 tablespoons
- Lime Juice - 5 tablespoons
- Olive Oil - 2 tablespoons
- Ground Black Pepper - to taste
- Coarse Salt - to taste
- Leek - 2 lbs
- Yellow Cherry Tomatoes - 2 lbs
- Cod fillet - 6 pieces
- Fresh basil leaves - 17.6 oz
- Vegetable Oil - to taste
Step by Step guide
Step 1
Preheat the oven to 428°F. Grease 2 ovenproof pans with vegetable oil.
Step 2
In a small bowl, mix ginger, soy sauce, lime juice, olive oil, and a bit of black pepper.
Step 3
Trim the dark green leaves and roots from the leeks. Then slice them into small rounds and rinse well. Cut the tomatoes into small wedges.
Step 4
Place the leeks and tomatoes in one pan, and the fish fillets in the other. Brush the vegetables and fish with the ginger marinade, season with salt and pepper. Put both pans in the oven for 10 minutes.
Step 5
Stir the vegetables and brush them again with the marinade. Return to the oven with the fish for another 2 to 4 minutes until the fish is cooked.
Step 6
Transfer the fish to serving plates and keep warm.
Step 7
Cook the vegetables for another 10 to 15 minutes until tender, then add the spinach and cook for another 5 minutes until wilted.
Step 8
Serve the spinach and vegetables alongside the fish immediately.
