Ingredients
- Wheat Flour - 3 cups
- Water - 8 fl oz
- Vegetable Oil - 2 tablespoons
- Salt - to taste
- Salted pork belly - 10.6 oz
- Napa Cabbage - 1 head
- Chopped Green Onions - 1 teaspoon
- Grated Ginger Root - 1 teaspoon
- Soy Sauce - 2 tablespoons
- Chicken Egg - 1 piece
- Leek - 0.4 oz
Step by Step guide
Step 1
Pass the pork belly through a meat grinder or chop it finely with a knife. Wash the cabbage, shred it into thin strips, sprinkle with salt, and massage it gently with your hands. Don't press too hard to avoid releasing all the juice. Let the cabbage rest for 15 minutes, then add it to the meat mixture. Combine the cabbage with the meat, cilantro, ginger, and egg.
Step 2
Take the sifted flour, add a pinch of salt, and pour in the cold water. Knead until you have a smooth, elastic dough and let it rest for 30 minutes. Divide the dough into many small pieces. Roll each piece into a flexible rope, cut into circles, and roll them out with a rolling pin into thin discs.
Step 3
Place the prepared filling in the center of each rolled-out circle. Bring the edges of the disc together and pinch them tightly. Use a glass to create a pattern on each dumpling.
Step 4
In a preheated skillet, pour in the oil and place the dumplings. Fry them for 2 minutes on each side until they are pleasantly golden brown.
Step 5
Place a portion of dumplings on a plate, add chopped leek, and season with soy sauce.
