Fried Eggplant with Walnut Sauce
Ingredients
- Cilantro leaves - to taste
- Roasted walnuts - 4.6 oz
- Basil leaves - to taste
- Parsley leaves - to taste
- Fenugreek - 1 teaspoon
- Hot paprika - 1 teaspoon
- Turmeric - to taste
- Wine Vinegar - 1 tablespoon
- Garlic - 1 clove
- Onion - 1 head
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- Canola Oil - 1½ cups
- Eggplants - 4 pieces
- Red Onion - 1 head
Step by Step guide
Step 1
Combine walnuts, half of the cilantro, basil, and parsley, fenugreek, paprika, turmeric, vinegar, garlic, white onion, salt, and pepper with 1/3 cup of water in a food processor; blend until smooth (about 2 minutes). Set the sauce aside.
Step 2
Heat the oil in a skillet over medium heat. Dip the eggplant slices into the oil one by one and fry for about 4 minutes until golden brown. Transfer to paper towels to remove excess oil; season with salt and pepper.
Step 3
Spread 2 tablespoons of the prepared sauce on each eggplant slice and fold in half; transfer to a serving dish and sprinkle with the remaining cilantro, basil, parsley, and rings of red onion.
