Description
Fried Fish in Batter
Ingredients
- Sole fillets - 17.6 oz
- Wheat Flour - 5 tablespoons
- Lemon - ½ piece
- Vegetable Oil - 3 tablespoons
- Chicken Egg - 2 pieces
- Fat - 3.5 oz
Step by Step guide
Step 1
Prepare the batter. In a bowl, mix the flour and salt with two tablespoons of vegetable or melted butter, then dilute with warm water (120 ml) to avoid lumps. Cover the bowl with the batter and let it rest.
Step 2
Cut the fish fillet into pieces 1 cm thick and 5–7 cm long, sprinkle with salt, pepper, and chopped herbs; squeeze the juice of half a lemon over the fish, add a tablespoon of vegetable oil, mix, and let it sit for 15–20 minutes.
Step 3
10–15 minutes before serving, add two egg whites whipped to a foam into the batter; take each piece of fish with a fork, dip it in the batter, and immerse it in very hot fat prepared in a pot. While frying, shake the pot with the fish so that the pieces are covered with fat.
Step 4
When serving, arrange the fish in a pyramid shape on a warmed plate, placing a paper napkin underneath. Garnish the dish with sprigs of parsley. Serve separately with mayonnaise sauce with gherkins or hot tomato sauce. For a side dish — green salad and boiled potatoes with butter.
