Ingredients
- Flounder - 3 pieces
- New Potatoes - 12 pieces
- Pears - 3 pieces
- Tomatoes - 2 pieces
- Lemon - ½ piece
- Courgette - 1 piece
- Sweet Red Onion - ½ piece
- Natural Yogurt - 8.8 oz
- Bay leaf - 1 piece
- Ground Black Pepper - to taste
- Salt - to taste
- Olive Oil - to taste
Step by Step guide
Step 1
First, I prepare the sauce. I grate the pears, onion, peeled cucumber, and deseeded tomatoes on a fine grater. I add salt, pepper, and a bit of olive oil.
Step 2
I wash the potatoes and leave them with the skin on, then boil them with the bay leaf. I add salt to the water. I drain the water as soon as the potatoes are ready, but not all of it — I leave some in the pot.
Step 3
I cut off the head of the flounder, gut the body, and remove the skin. I add salt.
Step 4
I mash the potatoes with the remaining water. I usually don't overdo it. I squeeze in some lemon juice, add yogurt, ground pepper, and lemon zest. I mix it well. Low-fat sour cream can be used instead of yogurt.
Step 5
I fry the fish in olive oil until golden brown. Flounder is delicate, so there's no need to dry it out.
