- Hake - 2 lbs
- Egg white - 2 pieces
- Wheat Flour - 2.8 oz
- Lemon - 1 piece
- Cotton Oil - 17 fl oz
- Salt - to taste
Step by Step guide
Step 1
In one bowl, beat the eggs, and in another, sift the flour.
Step 2
Heat the oil in a deep fryer or deep skillet to 180–374°F (to check, you can use a cube of yesterday's bread: at this temperature, it should brown within 30 seconds).
Step 3
Season the hake fillets with salt, coat them in flour, shake off the excess, and then dip them in the eggs. Fry the fish in batches until golden brown.
Step 4
Remove the fish with a wide spatula, allowing excess oil to drain, and pat dry on a paper towel. Place the cooked fillets on a serving platter, keeping them warm while frying the remaining batches. Serve immediately with lemon wedges cut into 6 slices.
