- Hake - 5 lbs
- Wheat Flour - 1.4 oz
- Cotton Oil - 17 fl oz
- Lemon - 1 piece
- Salt - to taste

Step 1
Clean and gut the hake, seasoning them inside and out with salt. Curl each fish so that the tail fits into its mouth, gently squeeze the jaws so that the teeth penetrate the flesh, thus securing the ring.
Step 2
Heat the oil in a deep fryer or skillet to 180–374°F (to check, you can use a cube of yesterday's bread: at this temperature, it should brown within 30 seconds). Dredge the hake in flour, shake off the excess, and fry in the oil, two at a time, until golden brown.
Step 3
Remove the cooked fish from the oil, let the excess fat drain, and keep warm while frying the rest.
Step 4
Serve immediately upon readiness, garnished with lemon slices.
