Fried honey mushrooms with vegetables
Ingredients
- Honey Mushrooms - 10.6 oz
- Eggplant - 1 piece
- Ramiro Pepper - 1 piece
- Red Onion - 1 head
- Salt - to taste
- Ground Black Pepper - to taste
- Olive Oil - to taste
Step by Step guide
Step 1
Prepare the ingredients.
Step 2
Peel the onion.
Step 3
Cut the onion into wedges.
Step 4
Heat olive oil in a deep skillet and add coarse salt.
Step 5
Place the onion in the hot skillet.
Step 6
Once the onion starts to brown, stir it.
Step 7
Cut the eggplant into small cubes.
Step 8
Add the eggplant to the skillet with the onion.

Add pepper.
Step 10
If needed, add a bit more oil and stir.

After 3 minutes, stir again and reduce the heat to medium.

After another 3–5 minutes, stir and add salt.

Cut the pepper.

Add the pepper to the skillet.

Stir and sauté for about 3 minutes.

Rinse the honey mushrooms, dry them, and separate them. Cut long mushrooms in half.

Add the honey mushrooms to the vegetables.

Stir and sauté for another 5 minutes.

Cover with a lid and cook on low heat for 10–15 minutes, stirring occasionally.
