Fried Keto Cod with Vegetables and Cream
Ingredients
- Cod fillet - 14.1 oz
- Cream 22% - 6 fl oz
- Marinated cherries - 12 pieces
- Leek - 1.4 oz
- Meyer Lemon Juice - 1 tablespoon
- Olive Oil - 2 tablespoons
- Ground Black Pepper - to taste
- Ocean salt - to taste
- Flaky sea salt - a pinch
Step by Step guide
Step 1
Cut the cod into large pieces.
Step 2
Heat the oil in a pan with a couple of pinches of coarse salt.
Step 3
Place the cod in the pan. Season with black pepper.
Step 4
Once the bottom side is browned, flip it over and reduce the heat.
Step 5
Sprinkle with lemon juice.
Step 6
After 4 minutes, transfer the cod to a plate.
Step 7
Slice the leek into large pieces.
Step 8
Crush the tomatoes with a chef's knife.
Step 9
Add the vegetables to the pan. Sauté over medium heat.
Step 10
After 3–4 minutes, stir and pour in the cream. Add pepper.
Step 11
After a couple of minutes, add the cod. Stir.
Step 12
After 3–4 minutes, the dish is ready. Season with salt to taste.
