Ingredients
- Langoustines - 12 pieces
- Shallot - 2 heads
- Garlic - 2 cloves
- Butter - 4.4 oz
- Vegetable Oil - 2 tablespoons
- Brandy - 4 tablespoons
- Fish Oil - 7 fl oz
- Herbs - 0.4 oz
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Cut the langoustines in half lengthwise from the tail using a sharp knife.
Step 2
Remove the dark intestinal vein on the inside.
Step 3
Pat the meat dry, season with salt and pepper.
Step 4
Peel and finely chop the shallot and garlic.
Step 5
In a skillet, heat 3 tablespoons of butter mixed with vegetable oil over high heat.
Step 6
Sear the langoustines for 2 minutes — first on the meat side, then on the shell side.
Step 7
Remove from the skillet and place on paper to absorb excess fat.
Step 8
Drain the fat from the skillet.
Step 9
Melt 1 tablespoon of butter and sauté the shallot and garlic over medium heat for 3 minutes.
Step 10
Then remove from heat, add the brandy, stock, herbs, remaining butter, and blend with a mixer.
Step 11
Warm the langoustines in this sauce for 1 minute.
