- Garlic - 4 cloves
- Apple Wine - 7 fl oz
- Butter - 7.1 oz
- Chopped Sage Leaves - 4 teaspoons
- Grated Pecorino Pepato Cheese - 1.4 oz
- Chervil - to taste
Step by Step guide
Step 1
First, prepare the mushrooms. Brush off any sand from the morels with a brush and select firm ones, avoiding any wet or slimy mushrooms with soft stems.

Rinse the mushrooms well under running water several times.
Step 3
Heat a skillet over medium heat, pour in the olive oil, and immediately add the mushrooms.

Season with salt and pepper and do not stir.

Allow the initial amount of juice to evaporate until the bottom is dry.

Finely chop the shallots and garlic, and add them to the skillet.

Stir to combine.

After 1 minute, pour in the wine and let it reduce by half.

Add the butter and allow it to create a sauce with the wine.

Stir in the parsley, mix, and plate the dish.
