Description
Cooked muksun is one of the best northern fish. We added a 'White Sauce' to the recipe, thus slightly Europeanizing the taste.
Ingredients
- Hot-Smoked Muksun Fillet - 6.3 oz
- Ostrich fern - 0.7 oz
- Vegetable Oil - 0 fl oz
- Radish - 0.4 oz
- Celery stalk - 0.5 oz
- Sun-Dried Tomatoes - 1.4 oz
- Spinach - 1.1 oz
- White Sauce - 1 fl oz
Step by Step guide
Step 1
Fry the muksun fillet skin-side down in a pan for 1 minute until a golden crust forms. Flip to the other side and cook for another 30 seconds.
Step 2
Place a small piece of butter on the fish and put it in the oven for 5 minutes. One and a half minutes before the fish is done, warm the salad in the pan for 1–2 minutes.
Step 3
Arrange the ostrich fern, vegetable oil, radish, celery stalk, diced tomatoes, and spinach on a warm plate (to keep the garnish from cooling down). Place the cooked muksun fillet on top of the garnish. Drizzle with the pre-warmed 'White Wine' sauce. Garnish with watercress and cloudberries.
