Fried Noodles with Pork (Tian Tian Chao Mian)
Ingredients
- Coarse Salt - to taste
- Courgette - ½ piece
- Vegetable Oil - 3 tablespoons
- Carrot - 1 piece
- Onion - 1 head
- Garlic - 4 cloves
- Pork Mince - 4.2 oz
- Grated Ginger Root - 1 piece
- Scallions - 6 stalks
- Soy Sauce - 1½ tablespoons
- Apple Wine - 1½ tablespoons
- Sugar - 1½ teaspoons
- Peanut Sprouts - 2 cups
- Rice Noodles - 6 oz
- Sesame Oil - 1 tablespoon
Step by Step guide
Step 1
Boil the noodles in boiling water until cooked. Drain and rinse under cold water.
Step 2
Peel the cucumber and cut it into thin strips, place in a bowl and add a pinch of salt. Mix well and let sit for 5 minutes.
Step 3
Heat a wok over high heat until it starts to smoke. Add a tablespoon of oil and spread it over the surface. Sauté the sliced onion and thinly sliced carrot until soft, about 1 minute. Transfer to a plate.
Step 4
Return the wok to high heat, pour in the remaining oil and spread it over the surface. Add the pork, minced garlic, minced ginger, and half of the chopped green onion. Stir-fry, breaking up clumps, for 3-4 minutes.
Step 5
Add the soy sauce, wine, sugar, bean sprouts, and the carrot and onion mixture. Cook, stirring, for 30 seconds.
Step 6
Add the cucumber, remaining green onion, noodles, and sesame oil. Cook, stirring, for another minute. Season with salt.
