Description
One of three excellent Caucasian methods (the others being Jyz-Byz and Kuchmachi) to transform offal into something truly delicious.
Ingredients
- Ground coriander - 1.4 oz
- Beef hoof - 21.2 oz
- Beef Kidneys - 21.2 oz
- Onion - 5.6 oz
- Tomatoes - 10.6 oz
- Basil - 0.7 oz
- Paprika - to taste
- Butter - 1.1 oz
- Salt - to taste
Step by Step guide
Step 1
Prepare the necessary ingredients.
Step 2
Clean the heart and liver, then slice them thinly into strips. To make the liver easier to slice, it should be lightly frozen.
Step 3
Chop the onion.
Step 4
Blanch the tomato in boiling water, peel off the skin, and chop it finely.
Step 5
Finely chop the herbs.
Step 6
Sauté the onion in butter until golden brown.
Step 7
Add the chopped offal. Sauté for 10 minutes.
Step 8
Add the chopped tomatoes.
Step 9
Finally, add the cilantro, basil, paprika, and salt.
Step 10
Serve.
