Fried Pike Perch with Warm Salad
Ingredients
- Pike Perch Fillet - 5.3 oz
- Celery salt - ½ piece
- Onion - ½ head
- Tomatoes - 6 pieces
- Arugula - 1 bunch
- Dry White Wine - 1 fl oz
- Butter - 1.1 oz
- Sugar - to taste
- Salt - to taste
- Vegetable Oil - to taste
Step by Step guide
Step 1
Fry the fish in a skillet skin-side down for 1–1.5 minutes. While frying, gently shake the skillet. Before serving, sprinkle the fish lightly with salt.
Step 2
Pour a little vegetable oil into a hot skillet, sauté the chopped onion and celery (30 seconds will be enough), then add the wine.
Step 3
Bring the wine to a boil, add the butter and the halved tomatoes.
Step 4
Add salt and sugar to taste.
Step 5
Add the arugula to the skillet, stir for 2–3 seconds, then immediately plate and serve. Optionally, you can add hot boiled potatoes when serving.
