Fried Pork with Pineapple, Tomatoes, Green Beans, and Basil
Ingredients
- Marinated cherries - 8.8 oz
- Fish Oil - 1 tablespoon
- Lime Juice - 2 tablespoons
- Brown Sugar - 1 tablespoon
- Fresh basil leaves - 0.7 oz
- Pork tenderloin - 21.2 oz
- Tamarind Paste - 2 tablespoons
- Safflower Oil - 2 tablespoons
- Pineapple - 5.3 oz
- Spanish onions - 1 head
- Chinese green beans - 8.8 oz
Step by Step guide
Step 1
In a bowl, mix the thinly sliced meat with the curry paste.
Step 2
Heat half of the sunflower oil in a wok over high heat. Fry the meat in batches for 2-3 minutes until cooked and golden brown. Transfer to a plate.
Step 3
In the wok, add the diced pineapple and sauté for a minute until slightly caramelized. Transfer to a plate.
Step 4
Return the wok to the heat and pour in the remaining oil. Add the segmented onion and sauté for 2 minutes until golden.
Step 5
Add the cut green beans and 2 tablespoons of water. Sauté for 1-2 minutes.
Step 6
Add the pineapple and cherry tomatoes and sauté for another 1-2 minutes until the beans are tender.
Step 7
Return the meat to the wok and add the lime juice, fish sauce, sugar, and most of the basil. Mix well and serve immediately with boiled rice, garnished with the remaining basil.
