Fried Potatoes with Chanterelles
Ingredients
- Salad Potatoes - 2 lbs
- Pickled Chanterelles - 17.6 oz
- Vegetable Oil - 2 fl oz
- Butter - 1.4 oz
- Salt - to taste
- Ground Black Pepper - to taste
- Parsley - 0.4 oz
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Rinse the chanterelles and dry them well.
Step 3
Peel the potatoes, cut them into sticks, and dry them well as well.
Step 4
Heat half of the vegetable oil in a skillet, add the potatoes, and fry, turning occasionally, until golden brown. Turn the potatoes as infrequently as possible. Season with salt to taste.
Step 5
Heat the skillet without oil, add the chanterelles, and sauté for 2–3 minutes, stirring: this will remove excess moisture and make the mushrooms crispier.
Step 6
Add vegetable oil to the skillet with the chanterelles and fry for about 5–7 minutes until the chanterelles turn golden. Season with salt to taste.

Combine the cooked mushrooms with the potatoes in the skillet, add the butter, and mix.
Step 8
Add pepper and salt if needed.
Step 9
Serve the fried potatoes with chanterelles, garnished with finely chopped parsley.
