Fried Potatoes with Mushrooms
Ingredients
- Salad Potatoes - 17.6 oz
- Pickled Chanterelles - 17.6 oz
- Onion - 1 head
- Sour Cream - 4 tablespoons
- Salt - a pinch
- Vegetable Oil - 4 tablespoons
Step by Step guide
Step 1
Wash the mushrooms and cut them into large pieces (remove the stem and cut lengthwise in half, cut the cap into 4 parts). Finely chop the onion. Cut the potatoes into 1 cm cubes.
Step 2
Heat a skillet over medium heat, add oil to completely cover the bottom. After a minute, when the oil is heated, add the chopped mushrooms and fry for 3–5 minutes until the mushrooms release their juice.
Step 3
When the mushrooms release their juice, add the onion and stir. Simmer on low heat for 45–55 minutes, stirring every 10–15 minutes until all the liquid evaporates.
Step 4
Bring 1 liter of clean water to a boil. Add the potatoes and fry over medium heat for 3–5 minutes, stirring constantly.
Step 5
Pour in the boiling water so that it completely covers the potatoes with mushrooms, but no more, add salt and cook on low heat for 25–30 minutes, stirring thoroughly every 3–4 minutes.
Step 6
Check the potatoes for doneness, add the sour cream and simmer on low heat for another 3–5 minutes, stirring continuously.
Step 7
Turn off the heat, cover with a lid, and let it sit for 15 minutes.
