Ingredients
- Salmon bellies - 2 pieces
- Brussels Sprouts - 10.6 oz
- Onion - 1 piece
- Olive Oil - 4 tablespoons
- Meyer Lemon Juice - 1 tablespoon
- Balsamic Vinegar - 1 tablespoon
- Dijon Mustard - 1 teaspoon
- Toasted Sesame - 1 teaspoon
- Cayenne Pepper - to taste
- Saffron - a pinch
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Preheat the oven to 392°F. Season the fish with salt and pepper, and fry it over high heat in a small amount of olive oil for 2 minutes on each side. Transfer to a baking dish skin side down and place in the preheated oven for 5 minutes (or a little longer, until cooked through).
Step 2
Cut the Brussels sprouts in half and sauté in olive oil for about 5 minutes, add the sliced onion and vinegar, season with salt, and cook for another 5–7 minutes, stirring constantly.
Step 3
Mix all the sauce ingredients: 3 tablespoons of olive oil, mustard, sesame seeds, saffron, cayenne pepper, and salt. Drizzle over the cooked fish before serving.
