Description
A traditional Southeast Asian method of preparing dinner. Fish caught in the morning was coated in salt until evening to prevent spoilage, then fried. Fried salted fish is also commonly served alongside very spicy rice. The salty flavor has a calming effect on the spice.
Ingredients
- Sea Bass - 1⅕ kg
- Ocean salt - 3.5 oz
- Cilantro - 3.5 oz
- Cucumbers - 2 lbs
- Sesame Oil - 0 fl oz
- Vegetable Oil - 10 fl oz
- Cayenne Pepper - to taste
- Meyer Lemon Juice - 1 tablespoon
- Sugar - 1 tablespoon
Step by Step guide
Step 1
Gut the fish, clean it, rinse it, and sprinkle salt from head to tail. Place it in a suitable container, put it in the refrigerator, and marinate for 24 hours.
Step 2
In a deep skillet, heat vegetable oil vigorously and fry each fish in the bubbling oil until fully cooked.
Step 3
Peel the cucumbers and cut them into pieces of any shape. Mix with chopped cilantro, sugar, sesame oil, cayenne pepper, and lemon juice. Serve as a side dish with fish.
