Ingredients
- Scallops - 12 pieces
- Courgette - 21.2 oz
- Milk - 8 fl oz
- Wheat Flour - 2 tablespoons
- Shallot - 1 head
- Ground Black Pepper - 1 teaspoon
- Chopped Sage Leaves - 2 tablespoons
- Olive Oil - 12 tablespoons
- Salt - to taste
Step by Step guide
Step 1
Remove the mollusks from their shells, cut them lengthwise, then in half, and rinse thoroughly in cold water three times.
Step 2
Soak in milk for 5 minutes, then remove, coat in flour mixed with salt and pepper, and fry in a skillet heated with olive oil (6 tablespoons) until light brown.
Step 3
Place the cooked pieces on prepared clean shells, add another 6 tablespoons of olive oil to the oil remaining in the skillet, and sauté the finely chopped shallot in it.
Step 4
Separately, fry slices of young zucchini and place them in the shells next to the fried mollusks.
Step 5
Sprinkle everything with parsley, top with the fried shallots using a spoon, and drizzle with the oil left from frying.
