Fried tuna steaks with eggplant and aromatic ginger sauce
Ingredients
- Grated Ginger Root - 1 tablespoon
- Scallions - 3.5 oz
- Rice Vinegar for Sushi - 2 fl oz
- Sesame Oil - 2 fl oz
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- Pickled Eggplant with Peppers - 4 pieces
- Vegetable Oil - 3 tablespoons
- Bonito tuna fillet - 4 pieces
Step by Step guide
Step 1
In a small bowl, mix the ginger, chopped green onion, vinegar, and sesame oil. Season with salt and pepper.
Step 2
In a covered skillet, heat 2 tablespoons of vegetable oil over medium heat. Add the sliced eggplants, season with salt and pepper. Cover and cook until golden brown for about 5–6 minutes. Uncover and cook for another 5 minutes, stirring, until soft and golden. Transfer to a plate.
Step 3
Wipe the skillet with a paper towel.
Step 4
Brush the steaks with the remaining vegetable oil, season with salt and pepper.
Step 5
Heat the skillet well over high heat. Place the fish in and fry for about 5 minutes on each side, so the meat inside remains pink.
Step 6
Cut each steak in half and arrange on plates. Surround with eggplants and drizzle with the sauce.
