Description

The shanks can also be prepared boiled under a white sauce. Serve with rice or boiled potatoes. The broth obtained from boiling the shanks can be used for making soups and sauces.

Ingredients

  • Veal Shank - 4 pieces
  • Wheat Flour - ½ cup
  • Chicken Egg - 2 pieces
  • Breadcrumbs - 1 cup
  • Parsley - 1 piece
  • Carrot - 1 piece
  • Onion - 1 head
  • Vegetable Oil - 3 tablespoons

Step by Step guide

Step 1

Scald the veal or pork shanks, clean them of hair, rub with flour, and singe to remove any remaining hairs. After that, rinse the shanks, cut them lengthwise into two parts, separating the meat from the bones.

Step 2

Then place the shanks and bones in a pot, cover with cold water, add the carrot, parsley, onion, salt, and boil for about 3-4 hours.

Step 3

After boiling, remove the shanks from the broth with a slotted spoon (separating and removing the bones - the so-called 'grandmothers'), sprinkle with pepper and salt, coat in flour, moisten with egg, coat in breadcrumbs, and fry in a heated pan with oil.

Step 4

You can serve mashed potatoes, green peas, and cucumbers as a side dish.
