- Udon Noodles - 8.8 oz
- Chicken Broth - 1 qt
- Garlic - 2 cloves
- Courgette - 2 pieces
- Vegetable Oil - 2 spoons
- Leek - 2 stalks
- Fresh Mushrooms - 15 pieces
- Sprouted legumes - ¼ glasses
- Snap Peas - 14 pieces
- Tofu - 1 piece
- Salt - 1 tablespoon
- Sugar - 2 spoons
- Soy Sauce - 2 spoons
- Sesame Oil - 2 spoons
- Scallions - 4 stalks
Step by Step guide
Step 1
Cook the noodles in boiling water for 2-3 minutes until soft. Drain and rinse under cold water, then divide into 2 bowls. Heat the broth and pour it over the noodles.
Step 2
Meanwhile, heat a wok over medium heat for 1-2 minutes until it starts to smoke, and add vegetable oil. Sauté the minced garlic for 5 seconds, then add the chopped vegetables, mushrooms, and tofu, but do not add the green onions. Stir-fry for 2-3 minutes until tender.
Step 3
Add salt, sugar, and soy sauce, then drizzle with sesame oil. Spoon over the noodles and sprinkle with green onions.
