Ingredients
- Courgette - 7.1 oz
- Wheat Flour - 0.7 oz
- Vegetable Oil - 0 fl oz
- Scallions - 3 stalks
- Parsley - 3 stalks
- Tomatoes - 2 pieces
- Salt - to taste
- Sugar - 1 teaspoon
- Orange Bell Peppers - 1 piece
- Meyer Lemon Juice - to taste
- Spinach - 1.8 oz
- Corn Salad - 5 stalks
Step by Step guide
Step 1
Peel the zucchini and slice it into rounds. If the zucchini is large, it is better to scoop out the seeds as well. Cut into slices about 1 cm thick. Dredge in flour and fry in heated oil.
Step 2
Finely chop the green onion and fry it separately. Add the spinach, roughly chopped salad, diced bell pepper, and tomatoes, along with chopped parsley. Sauté in a pan for about 10–15 minutes.
Step 3
Season the resulting mixture with salt and pepper to taste. Place the zucchini in a baking dish, pour the vegetable mixture over them, and bake in the oven for another 15–20 minutes. Allow the finished dish to cool and serve, sprinkled with chopped herbs.
