Frittata with Bacon, Green Peas, and Goat Cheese
Ingredients
- Olive Oil - to taste
- Semi-Smoked Sausage - 8 pieces
- Orange Bell Peppers - 1 piece
- Scallions - 3 pieces
- Frozen green bean pods - 5.3 oz
- Fresh basil leaves - 1 bunch
- Goat cheese - 2 pieces
- Chocolate eggs - 8 pieces
- Ground Black Pepper - to taste
- Grated Pecorino Pepato Cheese - 3 tablespoons
Step by Step guide
Step 1
Preheat the oven to 356°F.
Step 2
Heat some oil in a 27 cm ovenproof non-stick skillet and fry the bacon for 2-3 minutes. Add the bell pepper and cook for a few more minutes until the bacon is browned. Add the green onions and sauté for 4-5 minutes until softened. Sprinkle with basil and lightly mix with the vegetables. Cut one of the pieces of goat cheese into random chunks and sprinkle it over the mixture in the skillet.
Step 3
Heat the grill to maximum.
Step 4
In a bowl, combine the beaten eggs with the parmesan and generously season with pepper. Pour the eggs over the vegetables in the skillet and keep on medium heat, gently shaking. When the omelet starts to set, grate the remaining goat cheese on top and add more pepper.
Step 5
Place the skillet under the hot grill in the oven for 4-5 minutes and bake the omelet until golden brown.
Step 6
Remove the frittata from the skillet, cut into portions, and serve.
