- Chicken fillet - 4 pieces
- Salt - to taste
- Ground Black Pepper - to taste
- Mayonnaise - 7.1 oz
- Sour Cream - 5 tablespoons
- Coconut Milk - 13 fl oz
- Lime Juice - 2 tablespoons
- Salad Spices - 2 tablespoons
- Celery stalk - 2 pieces
- Canned Pineapple Chunks - 10.6 oz
- Canned Lemons - 10.9 oz
- Roasted Peanuts - 3 oz
- Coconut flakes - 1.8 oz
- Banana Leaves - to taste
Step by Step guide
Step 1
Season the chicken with salt and pepper and place it in a preheated skillet. Pour in the coconut milk (add water if necessary to fully cover the chicken), bring to a boil over high heat, then reduce to low heat and cook uncovered for 15 minutes until done. Transfer to a plate and cool. Tear into small pieces by hand and transfer to a bowl.
Step 2
In a small bowl, mix the mayonnaise and sour cream. Add lime juice, spices, and finely chopped celery. Combine everything with the chicken and add the diced pineapple, oranges, and peanuts. Season with salt and pepper and mix well. Chill in the refrigerator.
Step 3
In a serving bowl, place the lettuce leaves, then top with the chilled salad. Sprinkle with coconut flakes and serve.
