Description

Yes, with cucumber. Cucumber is almost entirely made of water and has a light, fresh taste that easily complements its plate companions. The magic of this salad is that it surprises. Different textures, bright colors, juiciness. All of this comes together and finds harmony under a tangy vanilla syrup with a hint of lemon aroma. Just a reminder, the choice of fruits is entirely up to you; I am only sharing my own experience. Also, if you can't find vanilla beans, you can omit them from the recipe. Or replace them with fresh mint or cinnamon, for example, and use different types of apples and pears in the salad. Why not?

Ingredients

  • Green Apples - 2 pieces
  • Red Grape Juice - 7.1 oz
  • Oranges - 2 pieces
  • Lemon - ½ piece
  • Sugar - 1.8 oz
  • Courgette - 1 piece
  • White Beans - 1 piece

Step by Step guide

Step 1

Let's start with the simple part. Fill a small saucepan with sugar and water in a 1 to 2 ratio. Place it over medium heat and heat until the sugar completely dissolves.

Step 2

Slice the vanilla bean in half lengthwise. Scrape out the seeds with a swift motion of the knife and add them along with the pod to the saucepan. Add the lemon zest, then bring the sugar syrup to a boil over high heat. Reduce until the desired thickness is reached, but remember that at a certain point, the syrup will turn into caramel. Add the juice of half a lemon, remove from heat, and set aside to cool.

Step 3

The hardest part is behind us. Now just wash the fruits and vegetables, remove the grapes from the stems, and place them in a bowl. Add the peeled and diced cucumber as well.

Step 4

Using a sharp knife, peel the oranges. Then, with a small knife, cut out the segments. This is much easier than it seems. We should get wedges without the white membrane. Add them to the bowl.

Step 5

If you think cutting the apples will take a lot of time, prepare the second half of the lemon we used. You can sprinkle the cut apples with lemon juice to prevent them from browning. I recommend adding them last.

Step 6

The fruit salad should be dressed with the completely cooled syrup. Serve immediately.
