Ingredients
- Fusilli pasta - 14.1 oz
- Young Spinach - 7.9 oz
- Garlic - 1 clove
- Mascarpone Cheese - 8.8 oz
- Lemon Juice - 1 tablespoon
- Grated Parmesan cheese - 1.1 oz
- Toasted Pine Nuts - 1.9 oz

Step 1
Cook the pasta according to the package instructions.
Step 2
Meanwhile, add half of the spinach, garlic, mascarpone, lemon juice, and parmesan to a food processor and blend until smooth.
Step 3
Once the pasta is cooked, drain it and continue cooking in the pot over low heat. Add the sauce, pine nuts, and remaining spinach to the pasta, mix, and cook for a couple of minutes. Add spices to taste and serve topped with grated cheese.
