  • Rack of Lamb - 21.2 oz
  • Garlic - 2 heads
  • Cilantro - 1 bunch
  • Parsley - 1 bunch
  • Carrot - 17.6 oz
  • Crushed Tomatoes in Their Own Juice - 10.6 oz
  • Onion - 21.2 oz
  • Mild Chili Spice - to taste
  • Green Butter - 6 pieces
  • Tomatoes - 8 pieces
  • Shelled pumpkin seeds - 0.7 oz
  • Chicken Broth - 3 fl oz
  • Dry White Wine - 3 fl oz
  • TABASCO® - to taste
  • Ground Black Pepper - to taste
  • Salt - to taste
  • Bun - 4 pieces

Step by Step guide

Step 1

Marinate the meat: rub the lamb with salt and pepper, and a head of crushed garlic. Drizzle with a teaspoon of vinegar. Marinate the meat for 3-4 hours.

Step 2

Cut the meat into 5-6 pieces and place them in a deep tray. Add half a kilogram of coarsely chopped onion and carrot. Add the stems of cilantro and parsley, and a whole head of garlic. Pour white wine and chicken broth over the meat, then knead the meat with your hands to release the juices from the onion and break the herbs. Bake covered with foil at 266°F for 3-4 hours.

Step 3

After baking, shred the meat into strands by hand. Puree the tomatoes in their own juice, add 3 cloves of finely chopped garlic, 100 g of finely chopped onion, cilantro, chili pepper, Tabasco, salt, and black pepper. Mix well and let the sauce rest for 10 minutes.

Step 4

Meanwhile, heat oil in a saucepan, add the lamb meat, pour over the sauce and the fat from the lamb that remained in the tray after baking. Then add the tomato sauce, bring to a boil, and remove from heat. Stir again. Let it sit for a few minutes.

Step 5

Heat 4 buns and slice them. Spread half a tablespoon of tomato sauce on the top and bottom halves of the buns. Layer with fresh lettuce, red onion, and thinly sliced tomatoes. Top with the braised lamb, cilantro, and sprinkle with pumpkin seeds. Close each burger with the other half of the bun.
