Georgian Ajika
Ingredients
- Cilantro - 1 bunch
- Red Long Chili Peppers - 7.1 oz
- Garlic - 1 head
- Fresh basil leaves - 2 tablespoons
- Dried Dill Stems - 1 tablespoon
- Ground coriander - 1½ tablespoons
- Uchiko Suneli - 2 tablespoons
- Basil - 1 bunch
- Parsley - 1 bunch
- Coarse Salt - 2 tablespoons
Step by Step guide
Step 1
First, the fresh hot peppers should be kept in a dark place for 1–2 days to wither slightly.
Step 2
Wash the dried peppers, dry them, and remove the seeds and partitions. Wear gloves while working!
Step 3
Then, place all the ingredients in a blender and grind them.
Step 4
Add salt: about 2 tablespoons. Continue adding salt until it no longer dissolves.
Step 5
Transfer to sterilized glass containers and store in the refrigerator.
