Ingredients
- Potato - 2 lbs
- Curry - 1 tablespoon
- Dijon Mustard - 1 tablespoon
- Ginger - 1.8 oz
- Black Cumin (Cumin) - 1 tablespoon
- Cilantro - 1 bunch
- Onion - 1 head
- Chicken Egg - 4 pieces
- Salt - to taste
- Vegetable Oil - 2 spoons
Step by Step guide
Step 1
Boil the potatoes in salted water for about ten minutes after the water comes to a boil. Drain the water, let the potatoes cool slightly, peel them, and slice into one-centimeter thick pieces.
Step 2
In a deep skillet, heat vegetable oil and sauté the cumin seeds and mustard seeds for about half a minute. Then add curry powder, finely chopped chili, and grated ginger, and sauté for another half a minute.
Step 3
Slice a large onion into thin half-rings and add it to the same frying pan. Sauté until the onion becomes soft. Then, add the potatoes and roughly chopped half a bunch of cilantro, season with salt, lower the heat, and simmer for ten to twelve minutes, stirring occasionally.
Step 4
Whisk the eggs with a small amount of water and a pinch of salt. Pour the egg mixture over the potatoes, cover the skillet with a lid, and let it cook on the lowest heat for another ten minutes. After that, remove from heat and serve the potatoes, sprinkled with the remaining chopped cilantro.
