Ingredients
- Chicken hearts - 8.8 oz
- Chicken Liver - 8.8 oz
- Onion - 1 head
- Garlic - 2 cloves
- Seedless Green Grapes - 8.8 oz
- Pistachios - 2.5 oz
- Thyme - 2 sprigs
- Port Wine - 4 fl oz
- Honey - 1 teaspoon
- Butter - 0.7 oz
- Lemon - ¼ piece
- Wheat Flour - 1.8 oz
- Vegetable Oil - 1 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Trim any veins from the gizzards if present. Slice the onion into half-rings and finely chop the garlic. Wash the grapes, remove them from the stems, and cut them in half.
Step 2
Heat a large skillet, add oil, and toss in the onion. Season the liver with salt and pepper, coat it in flour, shaking off the excess to ensure a thin layer.
Step 3
Carefully place pieces of liver in the skillet with some space between them. Flip the liver and add the hearts — no need to coat them. Stirring, after 3-4 minutes, add the garlic and thyme. Season with salt and pepper.
Step 4
Pour in the port wine, reduce the heat, and simmer for about 3 minutes. Add a spoonful of honey, squeeze in the lemon juice, toss in the grapes, and mix well.
Step 5
Add the butter, remove everything from the heat — to prevent the butter from boiling. Stir to combine. Chop the pistachios slightly and sprinkle them on top.
